Description: Jerusalem Artichokes, also known as sunchokes, are sunflower relatives grown for their tuberous roots, which have a nutty, sweet flavor.

 

Growing Conditions: Well-drained soil, full sun. They are hardy perennials.

 

Harvesting: Harvest tubers in late fall or early winter after the foliage has died back. Dig carefully to avoid damaging the tubers. Makes delicious soup.
